Homemade kachoris are a delightful Indian snack, often enjoyed with tamarind chutney or yogurt. Here's a simple recipe to make them at home:
### Ingredients:
#### For the Dough:
- 2 cups all-purpose flour (maida)
- 1/4 cup oil or ghee
- A pinch of salt
- Water (as needed)
#### For the Filling:
- 1 cup yellow moong dal (split yellow gram), soaked for 2 hours and drained
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1/2 teaspoon asafoetida (hing)
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1 teaspoon amchur (dry mango powder)
- Salt to taste
### Instructions:
#### Making the Dough:
1. In a large mixing bowl, combine the all-purpose flour and salt.
2. Add oil or ghee and mix well until the flour resembles breadcrumbs.
3. Gradually add water and knead into a smooth, firm dough.
4. Cover the dough with a damp cloth and set aside for at least 30 minutes.
#### Preparing the Filling:
1. Heat 2 tablespoons of oil in a pan over medium heat.
2. Add cumin seeds, fennel seeds, and asafoetida, and let them splutter.
3. Add the soaked and drained moong dal and sauté for a few minutes.
4. Add coriander powder, garam masala, red chili powder, amchur, and salt. Mix well.
5. Cook until the dal mixture is dry and aromatic. Remove from heat and let it cool.
#### Assembling the Kachoris:
1. Divide the dough into small, equal-sized balls.
2. Roll each ball into a small circle (about 3 inches in diameter).
3. Place a spoonful of the filling in the center of the circle.
4. Bring the edges together to seal the filling inside and form a ball.
5. Gently flatten the filled dough ball.
#### Frying the Kachoris:
1. Heat oil in a deep frying pan over medium heat.
2. Once the oil is hot, carefully slide in the kachoris.
3. Fry the kachoris until they are golden brown and crispy on all sides.
4. Remove the kachoris with a slotted spoon and drain on paper towels.
