### Homemade Dabeli Recipe
#### Ingredients:
**For the Dabeli Masala:**
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon black peppercorns
- 2-3 dried red chilies
- 1/4 teaspoon cinnamon powder
- 2 cloves
- 1/4 teaspoon turmeric powder
**For the Potato Filling:**
- 3 medium potatoes, boiled and mashed
- 2 tablespoons oil
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon asafoetida (hing)
- 1/4 cup tamarind pulp
- 1 tablespoon jaggery or sugar
- Salt to taste
- 2-3 tablespoons Dabeli masala (from above)
**For Assembling Dabeli:**
- 6 pav buns (or small burger buns)
- 1/4 cup garlic chutney
- 1/4 cup tamarind chutney
- 1/4 cup green chutney
- 1/4 cup pomegranate seeds
- 1/4 cup roasted peanuts
- 1/2 cup sev (crispy gram flour noodles)
- 1 small onion, finely chopped
- 1/4 cup fresh coriander leaves, chopped
- 2 tablespoons butter
#### Instructions:
1. **Prepare the Dabeli Masala:**
- In a dry pan, roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, dried red chilies, cinnamon powder, and cloves over medium heat until fragrant.
- Let the spices cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
- Mix in the turmeric powder and set aside.
2. **Make the Potato Filling:**
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add asafoetida (hing), then stir in the mashed potatoes.
- Add tamarind pulp, jaggery or sugar, salt, and 2-3 tablespoons of the prepared Dabeli masala.
- Mix everything well and cook for 2-3 minutes, allowing the flavors to blend. Remove from heat and set aside.
3. **Prepare the Buns:**
- Slice the pav buns in half horizontally.
- Spread garlic chutney on one side of the bun and tamarind and green chutney on the other side.
4. **Assemble the Dabeli:**
- Take a spoonful of the prepared potato filling and place it on the bottom half of the bun.
- Top with pomegranate seeds, roasted peanuts, chopped onion, and coriander leaves.
- Sprinkle sev generously over the filling.
- Close the bun with the top half.
5. **Toast the Dabeli:**
- Heat a pan or tawa over medium heat. Add a little butter and toast the assembled dabeli on both sides until golden brown and crispy.
6. **Serve:**
- Serve the dabeli hot, garnished with extra sev and chutneys on the side.
