Making **homemade dhokla** is a simple and delicious process! Here’s a traditional recipe for soft and spongy dhokla, a popular Gujarati snack. This version uses besan (gram flour) as the main ingredient and is steamed for a healthy, light dish.

### Ingredients:

#### For the Dhokla Batter:
- 1 cup **besan** (gram flour)
- 1 tablespoon **semolina** (optional, for added texture)
- 1 tablespoon **lemon juice**
- 1 teaspoon **ginger-green chili paste**
- 1 teaspoon **eno fruit salt** (or baking soda)
- 1/2 teaspoon **turmeric powder**
- 1 teaspoon **sugar**
- Salt to taste
- 3/4 cup **water**

#### For Tempering:
- 1 tablespoon **oil**
- 1 teaspoon **mustard seeds**
- 1 teaspoon **sesame seeds**
- A pinch of **asafoetida** (hing)
- 2 green chilies (sliced lengthwise)
- A few curry leaves
- 1 tablespoon **sugar** dissolved in 1/4 cup **water**

#### For Garnish:
- Chopped **coriander leaves**
- Grated **coconut** (optional)

### Instructions:

#### 1. Prepare the Batter:
- In a mixing bowl, combine besan, semolina, turmeric, sugar, and salt.
- Add water gradually, whisking continuously to avoid lumps. The batter should be smooth and of medium consistency.
- Add lemon juice and ginger-green chili paste, mixing well.
- Just before steaming, add **eno fruit salt** (or baking soda) to the batter. Stir gently in one direction, and you'll see bubbles forming. Don’t overmix.

#### 2. Steam the Dhokla:
- Grease a **thali** (flat plate) or a round dish with oil.
- Pour the prepared batter into the greased dish and spread evenly.
- Place the dish in a preheated steamer and steam for about **15-20 minutes** or until a toothpick inserted in the middle comes out clean.
- Once done, remove the dish from the steamer and let it cool for a few minutes before cutting the dhokla into squares or diamonds.

#### 3. Prepare the Tempering:
- Heat oil in a small pan. Add mustard seeds and let them crackle.
- Add sesame seeds, asafoetida, green chilies, and curry leaves. Sauté for a few seconds.
- Pour the tempered mixture over the steamed dhokla evenly.
- Drizzle the sugar-water mixture over the dhokla to keep it moist and soft.

#### 4. Garnish and Serve:
- Garnish with chopped coriander leaves and grated coconut (if using).
- Serve with green chutney or tamarind chutney for a delicious snack!
