PATTIES HOMEMADE
Here’s a recipe for homemade patties that are pork-free, using beef or chicken instead. You can customize it with your preferred fillings and spices.
### Ingredients:
#### For the dough:
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp turmeric (for color, optional)
- 1/2 cup cold unsalted butter (or margarine), cubed
- 1/4 cup cold water
#### For the filling (Beef or Chicken):
- 1 lb ground beef or ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup bell pepper, diced (optional)
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp allspice (optional)
- 1 tsp soy sauce or Worcestershire sauce
- 1/2 tsp salt (adjust to taste)
- 1/2 cup breadcrumbs (optional, for binding)
- 1 tbsp vegetable oil
- 1 small Scotch bonnet pepper (optional, for heat)
### Instructions:
#### Prepare the dough:
1. In a large bowl, combine flour, salt, and turmeric.
2. Add the cold butter cubes and use your fingers or a pastry cutter to mix until the dough resembles coarse crumbs.
3. Slowly add cold water, a little at a time, and mix until a dough forms. Don’t overmix.
4. Wrap the dough in plastic wrap and chill in the fridge for about 30 minutes.
#### Make the filling:
1. Heat the oil in a skillet over medium heat. Add onions, garlic, and bell peppers, and sauté until soft (about 3-5 minutes).
2. Add ground beef or chicken and cook, breaking it apart with a spoon until browned (about 7-10 minutes).
3. Stir in thyme, paprika, black pepper, allspice, salt, and Scotch bonnet pepper (if using).
4. Add soy sauce or Worcestershire sauce and cook until most of the liquid evaporates.
5. Optionally, stir in breadcrumbs to help bind the filling. Remove from heat and let the filling cool.
#### Assemble the patties:
1. Preheat oven to 375°F (190°C).
2. Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
3. Cut out circles using a round cutter or a bowl (about 5 inches in diameter).
4. Place a spoonful of the filling in the center of each dough circle.
5. Fold the dough over to form a half-moon shape and press the edges together with a fork to seal.
6. Place the patties on a baking sheet lined with parchment paper. You can brush them with an egg wash (1 beaten egg) for a golden finish.
7. Bake for 25-30 minutes, or until the patties are golden brown.
