Bannock is a simple yet delicious bread that has been a staple in Indigenous and Scottish cuisine for centuries. It’s easy to make, requires minimal ingredients, and can be cooked in a pan, oven, or even over an open fire. Whether you enjoy it plain, with butter, or as a base for sweet or savory toppings, this homemade Bannock recipe will surely satisfy.

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter or oil
  • ¾ cup water or milk

Instructions:

Step 1: Mix Dry Ingredients

In a large mixing bowl, combine the flour, baking powder, and salt. Stir well to evenly distribute the ingredients.

Step 2: Add Fat

Cut in the butter (or mix in the oil) until the mixture has a crumbly texture. This helps create a soft and flaky Bannock.

Step 3: Add Liquid

Slowly pour in the water or milk while stirring. Mix until a soft dough forms. If the dough is too sticky, add a little more flour. If it’s too dry, add a bit more water.

Step 4: Shape the Dough

Lightly flour a clean surface and knead the dough gently for a minute. Shape it into a round disk about ½ inch thick.

Step 5: Cook the Bannock

  • Pan-fried Method: Heat a lightly greased pan over medium heat. Cook the dough for about 5-7 minutes on each side until golden brown and cooked through.
  • Oven Method: Preheat the oven to 375°F (190°C). Place the dough on a greased baking sheet and bake for 20-25 minutes or until golden brown.
  • Campfire Method: Flatten the dough and wrap it around a stick or cook it on a hot stone near the fire, turning occasionally.

Step 6: Serve and Enjoy

Let the Bannock cool slightly before slicing. Serve warm with butter, jam, honey, or even alongside soups and stews.

Tips for the Best Bannock:

  • For a sweeter version, add 1-2 tablespoons of sugar.
  • Add herbs, cheese, or dried fruit for extra flavor.
  • If making over a fire, ensure even heat for thorough cooking.

Bannock is a versatile and comforting bread that’s perfect for any occasion. Give this recipe a try and enjoy a taste of history in every bite!
