Ingredients:
4 sheets of phyllo dough (or warqa if available)
2 medium potatoes, boiled and mashed
4 eggs
1 small onion, finely chopped
1/2 cup canned tuna (or minced meat, cooked)
2 tbsp fresh parsley, chopped
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
Vegetable oil (for frying)
Instructions:
Prepare the Filling: In a bowl, mix the mashed potatoes, onion, tuna (or cooked minced meat), parsley, cumin, salt, black pepper, and paprika until well combined.
Assemble the Brik: Lay a sheet of phyllo dough on a clean surface. Place 2-3 tablespoons of the filling in the center, then create a small well in the filling and crack an egg into it.
Fold & Seal: Fold the dough over to form a triangle or rectangle, ensuring the edges are well sealed (use a bit of water to help stick the edges together).
Fry Until Golden: Heat oil in a frying pan over medium heat. Carefully place the Brik in the hot oil and fry for about 2 minutes on each side until crispy and golden brown.
Drain & Serve: Remove the Brik and drain on paper towels. Serve hot with a squeeze of lemon and enjoy!
