  • 10g (2 tsp) salt
  • 7g (2 tsp) dry yeast
  • 300ml (1 1/4 cups) warm water
  • 1 tbsp sugar
  • 1 tbsp butter, melted
  • 1 egg (for egg wash)
  • Sesame or poppy seeds for topping (optional)

Instructions:

Making Brot (German Bread):

  1. In a large bowl, mix the rye, whole wheat, and bread flour.
  2. Dissolve yeast in warm water with honey and let it sit for 5 minutes.
  3. Add the yeast mixture, salt, vinegar, and optional seeds to the flour mixture. Knead for 8-10 minutes until a smooth dough forms.
  4. Cover with a damp cloth and let rise for about 2 hours or until doubled in size.
  5. Preheat oven to 220°C (430°F). Place a tray of water at the bottom of the oven for steam.
  6. Shape the dough into a round or oval loaf and place on a baking sheet.
  7. Bake for 35-40 minutes or until the bread sounds hollow when tapped on the bottom.
  8. Let cool on a wire rack before slicing.

Making Brötchen (German Rolls):

  1. In a bowl, mix warm water, sugar, and yeast. Let it activate for 5 minutes.
  2. Add flour, salt, and melted butter. Knead for about 10 minutes until a smooth dough forms.
  3. Cover and let rise for 1-2 hours or until doubled in size.
  4. Preheat oven to 220°C (430°F).
  5. Divide the dough into 8-10 equal portions and shape into round rolls.
  6. Place rolls on a baking sheet, brush with egg wash, and sprinkle seeds if desired.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool slightly before serving.
