For the Biscuit Layers:
1 cup (125g) all-purpose flour
¼ cup (25g) cocoa powder
¼ teaspoon salt
½ teaspoon baking powder
½ cup (115g) unsalted butter, softened
¼ cup (50g) granulated sugar
1 large egg
½ teaspoon vanilla extract
For the Chocolate Cream Filling:
½ cup (115g) unsalted butter, softened
1 cup (125g) powdered sugar
2 tablespoons cocoa powder
1 tablespoon milk
For the Chocolate Coating:
1 ½ cups (250g) milk chocolate, melted
1 teaspoon coconut oil or vegetable oil (for a smoother coating)
🍫 Instructions
Step 1: Make the Biscuits
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
In a bowl, whisk together flour, cocoa powder, salt, and baking powder.
In another bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined.
Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
Roll out the dough to about ¼-inch thickness and cut into small rectangles (about 2x5 cm).
Place the biscuits on the baking tray and bake for 10-12 minutes. Let them cool completely.
Step 2: Prepare the Chocolate Filling
In a bowl, beat the butter, powdered sugar, cocoa powder, and milk until smooth.
Spread a generous amount of filling on one biscuit and top with another to make a sandwich. Repeat for all biscuits.
Step 3: Coat with Chocolate
Melt the milk chocolate and stir in the coconut oil for a smooth finish.
Dip each biscuit sandwich into the melted chocolate, ensuring it's fully coated. Use a fork to lift and place on a wire rack to set.
